Dry Ingredients
cOld fashioned oats, gluten free*If you want more of a muffin texture use 1 C old fashion oats and 1 C oat flour
tspBaking powder
tspCinnamon
tspSalt
scoopsCollagen peptides
cDiced peach, ripe (about 1 peach)
cFresh blueberries
Wet Ingredients
cGranola butter, sunflower butter or nut butter*If you butter it hard or dry microwave it to make it more pliable before mixing with other ingredients
Eggs*Flax eggs won't work I tried it.
tbspCoconut oil or avocado oil
cDairy free milk of your choice
tspPure vanilla extract
Toppings (optional)
Pre heat oven to 350F. Line a muffin pan with parchment or silicone liners
In a mixing bowl combine the granola butter, coconut oil, eggs, maple syrup, milk and vanilla
In a second bowl combine the oats, baking powder, cinnamon, salt, collagen, peaches and blueberries.
Pour the wet ingredients into the dry and mix well
Divide the batter into 12 muffin cups
Add additional fruit toppings (optional)
Bake for 25-30 minutes if using 2 cups old fashion oats, if using 1 C old fashion and 1 C oat flour for a muffin consistency bake 18-22 minutes
