Carrot Detox Salad

For the salad
largeCarrots, singlue color or multi-colored
largeEnglish Cucumber
- tbspFresh cilantro chopped
Optional add-ins: Avocado, scallions, sesame seeds, peanuts, cashews, edamame, pomegranate aerils, mandarin oranges
For the Dressing
tbspTamari or coconut aminos or low sodium soy sauce
tbspRice vinegar
tbspFresh lime juice
tspFresh grated ginger
tspHoney
tspSesame oil *optional
tbspAvocado oil or Olive oil
smallClove garlic. minced
tspWater, to thin it out a little bit
In a small mixing bowl combine all your dressing ingredients and set it aside - essential that this is done first for the best flavor
Wash your vegetables and peel the first layer of the carrots off. Use the peeler to make long strips of each vegetable.
In a large bowl combine the carrots, cucumber and cilantro. Pour the dressing over the top and serve! (if serving at a later time or meal prepping store the dressing separately)
