Gut Reset Fruit Salad

Fruit Salad
cPapaya, fresh and cubed
cBlueberries, fresh
cGreen or Asian Pear, with the skin on cubedYou can remove the skin if you have an allergy to it
cKiwi, cubed
cStrawberriesoptional- hard to find good ones this time of year
cPomegranates aerils
cRaspberries, fresh
Enzyme Dressing
Lime, zest- Zest of an entire lime
tbspAvocado oil or extra virgin light olive oil
- tspHoney
- tspFresh mint leaves, mincedOmit if you have reflux, you can use basil leaves instead
tbspWater
Wash & chop all your fruit and add it to a large mixing bowl
In a small cup whisk together the dressing ingredients. Pour over the top of the fruit salad when ready to eat.
If meal prepping store the dressing separately and the papaya. Both have enzymes that will eat away at the fruit. If using strawberries and meal prepping keep them whole.
