High Protein Avocado Toast

sliceSourdough bread or bread of your choice
Small, ripe avocado
cWhite beans, drained and rinsed
tspOlive oil
tbspLemon juice
Eggs, cooked the way you like them
tbspHemp seeds
- tbspPickled red onions (optional but great for the gut, a good substitute would be sauerkraut)
1-2`Sliced green onions
Sprinkle salt & Pepper
In a food processor combine the avocado, beans, olive oil and lemon juice. Just until combined it doesn't have to be completely smooth
Toast the bread
Cook your eggs as desired
Spread the avocado bean mixture on the toast, layer with hemp seeds, pickled onions, eggs, green onion and salt and pepper
