High Protein Baked Dumplings Recipe

lbRotisseries chicken, diced
-Dumplings or wontons, frozen
13.5ozCan coconut milk
tbspThai red curry paste
tspFish sauceCan omit for fish allergy without substitution
tbspSoy sauce or tamari
tbspSweet chili sauce If you want the original spicy flavor use 1 tbsp chilli crunch, I used sweet chili because it's not spicy and kids will actually eat it
cloveGarlic, minced
tspFresh ginger, minced
cBroccoli Florets, diced small
Toppings
cFresh scallions sliced
cFresh chopped cilantro
tbspSweet chili sauce- optional
cCooked Rice- optional
Pre heat oven to 375F
In a 9x13 baking dish mix the coconut milk, garlic, ginger, thai red curry, fish sauce and soy sauce.
Add the broccoli and chopped chicken.
Place the dumplings in the pan with none of them overlapping.
Cover tightly with tin foil and bake about 25 minutes until the broccoli is tender and the dumplings are cooked through
Serve with toppings and rice on the side
