Honey Miso Bacon Brussels Sprouts

sliceBacon of your choice, regular or turkey will work
stalkBrussels sprouts (about 4lbs)You can buy the stalks at Wholefoods
tbspOlive oil (or bacon drippings)

tspBlack pepper
Miso Honey Glaze
1`1/2`White miso paste
tbspHoney
tbspSpy sauce or Tamari if gluten free, or coconut aminos
tspOlive oil
tspRice vinegar or lemon juice
tspGarlic powder
pinchSalt
tspBlack pepper
Pre heat oven to 425F. Prepare 1 large or 2 small baking sheets. Quarter the brussels
In a skillet, cook the bacon until crisp. About 10-15 minutes. You can use the excess oil in the pan to pour over the brussels for extra flavor if you like or use olive oil like I did in the video
Spread the brussels out on the baking sheet(s). Pour the olive oil, salt and pepper over the top and mix well until coated.
Roast cut side down for 20-25 minutes until crispy
In a small bowl whisk the glaze together.
Chop the bacon into bits
When the brussels are ready pour the bacon and glaze over the top and mix well
Return the pan to the oven for 5 more minutes to caramelize the glaze
