Peach & Avocado Cowboy Caviar

Salad
15ozCan of chickpea rinsed and drained
Ripe peaches, diced
Avocado, diced
English cucumber, diced
cRed bell pepper, diced
cRed onion, diced
cFresh cilantro, minced
cPepitas
Dressing
tbspOlive oil
Juice of 2 limes
tbspHoney
tspDijon mustard (omit for mustard allergy)
tspSalt
Black pepper to taste
Wash and chop all the produce. In a large mixing bowl add the diced, peaches, chickpeas, avocado, cucumber, bell pepper, red onion, cilantro and pepitas
In a small bowl mix together the dressing ingredients and then pour the dressing over the salad. Mix well
Serve immediately. *Tip if you prefer this salad cold refrigerate the produce before chopping the produce or prepare the entire salad except for the avocado and add the avocado when ready to serve
