Dry Ingredients
tbspOat flour
tbspTapioca flour or corn starch
scoopProtein powder or collagen
tspCoconut sugar
tspPrebiotic fiber, I used Sunwarrior brand
pinchBaking soda
tspCinnamon
pinchSalt
Wet Ingredients
egg white or 2 tbsp liquid egg whites
tbspyogurt f your choice, I used dairy free coconut based, thick greek style
tbspMilk of your choice
tspPure vanilla extract
tspApple cider vinegar
Cinnamon swirl
tspDate syrup to make the swirl
Small pinch cinnamon on top
Optional icing
tbspPowdered sugar
tspWater
Combine all the dry ingredients in a 7oz ramekin.
Add the wet ingredient and stir well
Use the date syrup to make a swirl on top. Sprinkle cinnamon
Microwave for about 1 minute or until set
Optional topping: I used powdered sugar mixed with water to make an icing for the top. The cake is very good without this.
